Honey Chicken Stir Fry

Ingredients:

3 tablespoons canola oil, divided

1 pound boneless, skinless chicken breasts, cut into 1" pieces

2 to 3 cloves garlic, chopped

3 tablespoons honey

2 tablespoons soy sauce

2 teaspoons corn starch

1 cup chicken stock

3 to 4 cups fresh assorted stir fry vegetables

Few teaspoons toasted sesame seeds (optional)

Directions:

In a large skillet, heat 2 tablespoons oil.  Stir fry chicken in hot oil until it gets a little brown and is cooked through.  Remove chicken to a plate.  In a bowl, whisk together honey, soy sauce, chicken stock and corn starch.  In the same pan you cooked the chicken in, heat remaining tablespoon oil.  Stir fry vegetables quickly in oil, add garlic and cook another 30 seconds.  Add soy sauce mixture and chicken to the pan, and bring to a boil.  Cook and stir for 1 minute or until thickened.  Serve over rice.  Sprinkle toasted sesame seeds on top.
