Buttery Seafood Casserole

Ingredients:

1 1/2 to 2 pounds assorted seafood (uncooked medium sized peeled shrimp, crab meat, small chunks lobster, and/or small scallops)

3 sticks butter

1/2 cup finely diced celery

1/2 cup finely diced onion

1/2 cup finely diced red pepper

Juice from half a lemon

1/4 cup dry white wine

2 tablespoons fresh chopped Italian parsley

1 to 2 teaspoons Old Bay seafood seasoning

2 to 3 sleeves butter crackers, crushed

1/4 tsp. paprika

Directions:

Melt butter in a pan.

Cook celery, onion, and red pepper in butter for a few minutes.

Add wine, parsley and lemon juice.

Place seafood in the bottom of a casserole dish.

Sprinkle it with Old Bay.

Pour butter mixture over the top. 

Place crushed crackers on top. 

Sprinkle with paprika.

Bake in a preheated 375 degree oven for 25 to 35 minutes until seafood is cooked and top is golden.

Serve with lemon wedges.
