Plae Bistro in the Bellevue area is known for its hearty, homemade soups. Click here for a link to the restaurant's website . Chef Michael Catania showed some of the new items on their fall menu, and explained how to make a Roasted Butternut Squash Bisque.
Here is the recipe:
1 Butternut squash halved and roasted covered for one ½ hours @ 350 degrees
2 Cups heavy cream
1 Cup water or vegetable stock
1 tblsp cinnamon
¼ Cup brown sugar
¼ Cup maple syrup
1tsp ground nutmeg
Cut butternut squash in half and lay insides up in a baking dish or baking pan. Season with salt, white pepper, and cinnamon. Cover the bottom of pan with a little bit of water to help steam the squash. Bake for 90 minutes or until squash is fork tender. Let cool then remove the squash from shell being careful not to get any of the skin.
Combine all ingredients in a soup pot and then simmer for a ½ hour, then puree in blender.
The consistency should be very smooth! Add salt and white pepper to taste. If you want it sweeter, you can add more maple syrup or brown sugar.
