Game day bacon recipes

Patrick Cudahy Sweet Apple-Wood Smoked Bacon Kebobs with Citrus-Ginger Glazed Pineapple and Bell Peppers

Ingredients:

1 cup orange juice, 2 tbsp. fresh grated ginger root

2-3 cups of large diced pineapple

3 green or red bell peppers, large diced

1 red onion, large diced

12 strips of Patrick Cudahy Sweet Apple-Wood Smoked Bacon

3 in. heavy-duty tooth picks

Directions:

Heat orange juice in small saucepan with ginger and reduce juice by 1/3.

Let sauce cool, and pour sauce over pieces of diced pineapple and peppers. 

In a sauté pan, heat 1 tbsp. olive oil, sauté peppers, onion and pineapple over medium high heat until half cooked (about 1-2 minutes).

Cool all ingredients and set aside. Cook Patrick Cudahy Sweet Apple-Wood Smoked Bacon in the oven until bacon is cooked but not crisp.  (This will make the bacon easier to place on the kebob). 

Assemble ingredients on a tooth pick starting with the end of a bacon strip, pineapple, pepper, fold bacon back onto tooth pick, add onion, pepper, fold bacon again so the end of the bacon strip is on the tooth pick.  Chill until ready to serve. 

To serve, heat kebobs on a greased cookie sheet in the oven at 350 degrees for 5 minutes or heat on a grill until meat crisps and vegetables and pineapple are hot-serve.

 

Patrick Cudahy Sweet Apple-Wood Smoked Bacon Mini Appetizer Sandwiches

Ingredients:

6 slices Patrick Cudahy Sweet Apple-Wood Smoked Bacon, uncooked

2 Tbsp. brown sugar

1 Tbsp. maple syrup

6 tablespoons spicy relish or finely chopped Giardiniera

12 Hawaiian style rolls or butter top dinner rolls, split, lightly toasted if desired

6 ounces Patrick Cudahy Sweet Apple-Wood Smoked Deli Ham

3 tablespoons mayonnaise

1 - 1½ tablespoons Dijon mustard

Directions:

Place bacon in skillet and sprinkle with brown sugar and maple syrup.  Cook until crisp. 

Remove bacon from pan and cut bacon crosswise into fourths. 

Spread relish on bottom of each roll. 

Layer ham and bacon over bottom of rolls. 

Combine mayonnaise and mustard; spread evenly over the top of each roll. 

Close sandwiches with tops. 

Hot relish spread can be substituted with fruit spreads, apple butter or cheese spreads.

 

Patrick Cudahy Sweet Apple-Wood Smoked Bacon Best Ever Club Sandwiches

Ingredients:

1 6-inch naan or pita bread

½ cup packed Arugula or baby mixed greens or 4 romaine lettuce leaves

4 slices large tomato

4 ounces thinly sliced Patrick Cudahy Roast Turkey Breast

2 slices cheddar cheese

4 slices Patrick Cudahy Sweet Apple-Wood Smoked Bacon, crisply cooked*

4 ounces thinly sliced Patrick Cudahy Sweet Apple-Wood Smoked Deli Ham

8 slices ripe avocado (optional)

¼ cup mayonnaise

Directions:

Cut naan or pita bread in half.

Arrange lettuce, tomato, turkey, cheese, bacon, ham and avocado on top of one half of bread. Spread mayonnaise over other half of bread and close sandwich.

*4 slices Patrick Cudahy fully cooked bacon may be substituted.
 

Chocolate Brownies with Patrick Cudahy Sweet Apple-Wood Smoked Bacon

Ingredients:

Your favorite chocolate brownie box mix

1 cup chopped, cooked Patrick Cudahy Sweet Apple-Wood Smoked Bacon (reserve ¼ cup for topping)

Caramel sauce (approx. ¾ cup)

Directions:

Follow the directions on mixing the brownie recipe.

After the mix is ready, add ¾ cup chopped bacon into the brownie batter and follow the baking directions on the box. 

After brownies are baked and cooled, drizzle caramel on top of the brownies and add remaining bacon before serving.
