Ingredients:
4 Cups sugar
2 Cups red wine vinegar
4 T sambal chile paste
2 T chopped garlic
T coarse black pepper
½ cup chopped cilantro
Directions:
Combine sugar and red wine vinegar in a medium sauce pan and bring to a simmer, then add chile paste.
Reduce for 15 minutes then add remaining ingredients and reduce for 5 more minutes.
Let cool then put in container.
Sauce goes great with finger foods or anything roasted or grilled.
