Local chef to compete in New Orleans

GREEN BAY - Chef Ryan Schroeder of Big Tomatoes in Green Bay will soon be taking his culinary skills to New Orleans, where he'll compete for the title of American Culinary Federation Central Region Chef of the Year.

Chef Schroeder was chosen along with three other chefs from across the country to take part in the April 23rd competition.

Here is how the competition works:

The chefs will be working with a whole bone-in duck.  They will have 15 minutes to set up, 60 minutes to fabricate and cook four portions of their dish, 10 minutes to plate the dish and then 15 minutes to clean up.

A panel of judges will select the winner based on cooking skills, taste and professionalism.  The winner will then go on to compete in the national competition in Dallas, TX in July. 

FOX 11's Angela Kelly spent Wednesday morning with Chef Schroeder to see how he is preparing.

Big Tomatoes restaurant is located at 1244 Main Street in Green Bay.
