Door County Cherry Salad

Recipe from the Stone Harbor Resort

Ingredients:

4 oz. Dried Door County Cherries
4 oz. Gorgonzola Cheese, cubed
8 oz. Organic Spring Mix Lettuce
2 oz. Candied Walnuts
8 oz. Cherry Vinaigrette, recipe follows

Sun-Dried Cherry Vinaigrette
1 each Shallots, minced
1 cup Cherry Juice
1/4 cup + 2 Tbsp. Apple Cider Vinegar
1/2 cup Dried Cherries
1 Tbsp. Dried Tarragon
1 tsp. Salt
Pinch White Pepper
1 Tbsp. Maple Syrup
Pinch Ground Ginger
1 1/2 cups Salad Oil

Directions:
Sweat the shallots in 1 Tbsp. of the oil.
Add the juice, vinegar, cherries, seasonings and maple syrup.
Simmer for 15 minutes to reconstitute the cherries.
Remove from heat and emulsify the oil with large stick blender.
