Italian Sausage and Potato Soup

Ingredients:

1 pound bulk sweet or hot italian sausage

1 packet dry italian dressing mix

8 cups chicken stock

3 to 4 cups chopped kale

4 cups diced potatoes

1/2 to 1 cup heavy cream

A few tablespoons chopped flat leaf parsley

Grated parmesan cheese (optional)

Directions:

In a large soup pan, cook the sausage until cooked through and crumbled. Add the Italian dressing mix, chicken stock, and potatoes. Bring to a boil.  Simmer until potatoes are almost tender.  Add kale and simmer for another minute or two.  Turn down heat and add cream.  Heat until warm.  Serve in bowls with parsley and a little bit of Parmesan cheese on top if you like.
