Ingredients:

1/2 cup unsalted butter

1 to 2 cloves garlic, minced

1 tablespoon fresh chopped italian parsley

2 teaspoons lemon zest

Pinch of kosher salt

Freshly ground black pepper to taste

Parchment paper or plastic wrap

Directions:

Use a mixer or food processor to blend all of the ingredients until smooth.  Roll butter into a log and wrap it in parchment paper or plastic wrap.  Refrigerate until ready to use.  Keep in fridge for up to a week.  You can also keep the butter log in the freezer for up to 3 months.  Just slice off what you need, when you need it.  The butter is great on warm grilled steaks, chicken or seafood.  You can also melt the butter and serve it with hot cooked shrimp, lobster or crab legs.
