Ingredients:
12 par cooked wings
1 oz olive oil
1 medium sized yellow onion finely minced in food processor
1 oz garlic finely minced
1 oz ginger finely minced
1/2 tsp cumin seeds
1/2 tsp turmeric
1/4 tsp cayenne pepper
1 tsp garam masala
1 tbsp tomato sauce or puree
Salt, pepper, and water as needed
Directions:
In a sauce pot heat the oil until just below smoke point. Add in cumin seeds and toast until lightly colored. Add in onion, ginger, and garlic. Cook until almost dry and slightly browned. Add in the cayenne, garam masala, and turmeric and cook until almost pasty. Add in tomato sauce and simmer for about 2 minutes. Season with salt and pepper and add water to adjust consistency. Add in the wings and allow to lightly simmer for a few minutes to impart the flavor. Serve with buttermilk as an alternative to blue cheese.
