Ingredients:
1/2 cup butter
1/4 cup lemon juice
3 tablespoons chopped fresh parsley
3 to 4 cloves fresh minced garlic
1/4 teaspoon crushed red pepper flakes
1 1/2 pounds medium shrimp, peeled and deveined
Directions:
Heat butter and garlic to melt butter. Add lemon juice, parsley, and crushed red pepper. Pour 1/2 of butter mixture over shrimp, and toss to coat. Marinade in the refrigerator for 30 minutes. Preheat grill for high heat. Thread shrimp on skewers. Lightly oil grill or grill pan. Grill skewers for 2 to 3 minutes per side, brushing with reserved garlic butter mixture until shrimp turns pink. Serve with extra lemon wedges.
Great with rice pilaf.
