Ingredients:
1 (16 ounce) package tri-colored spiral pasta, cooked al
dente
2 cups fresh broccoli, cut into bite size pieces
2 cups fresh cauliflower, cut into bite size pieces
2 roma tomatoes, seeded and diced
1/2 cup red onion, chopped
4 ounces pepperoni slices
1 cup summer sausage, cut in chunks
1 (8 ounce) package mozzarella cheese, cut into cubes
1 (6 ounce) can sliced pitted black olives, drained
1 cup quartered artichoke hearts
3/4 cup vegetable oil
1/2 cup red wine vinegar
1 teaspoon dijon mustard
1 teaspoon italian seasoning
1 teaspoon minced garlic
Salt and pepper to taste
Directions:
In a small bowl, whisk together vinegar, oil, italian
seasoning, salt, pepper, mustard, and garlic. Toss pasta and the
other ingredients together. Drizzle dressing over the top and
gently toss to coat pasta. Chill until serving.
