Shrimp Ettouffee
Ingredients:
2 tbsp chopped garlic
1 cup green pepper small diced
1 cup onion small diced
1 cup celery small diced
1 cup diced shrimp
1/4 cup oil
1 tbsp Cajun seasoning
3 tbsp flour
2 cups shrimp stock or clam juice
Tabasco as needed
Pinch fresh chopped parsley
Pinch fresh picked thyme
Salt and pepper as needed
4 whole shrimp as garnish
Cooked rice as needed
Directions:
In a large sauce pot heat the oil. When almost smoking add the onion, celery, green pepper, and garlic. Stir often so the veggies don't burn.
When the veggies are tender add in the shrimp and keep stirring. When the shrimp looks half way cooked add in the Cajun seasoning and the flour and mix well.
Mix in the stock and allow everything to thicken. Season with the Tabasco, parsley, thyme, salt, and pepper.
Serve over rice and garnish with 2 cooked shrimp.
Chocolate and Strawberry Ganache Tartlets
Ingredients:
6 each mini graham cracker crusts
1/4 cup chopped dried strawberries (found in the bulk foods aisle at the grocery store)
1 1/2 cup heavy whipping cream
3 ea 3oz. Chocolate bars. (I prefer dark chocolate)
1/4 cup sugar
Chopped walnuts as needed
Directions:
In a mixing bowl, break up the chocolate bars into small chunks
In a small sauce pot heat the strawberries, sugar, and cream to a boil. Remove from heat.
Pour the cream mixture over the chocolate and mix well.
When all the chocolate is melted spoon into the tartlet shells. Top with some chopped nuts. Allow to cool and serve.
