Ingredients:
8 to 10 cups seeded, diced watermelon
1/2 cup fresh mint leaves, chopped
2 to 3 tablespoons olive oil
2 tablespoons fresh lime juice
1 cup crumbled feta cheese
Fresh ground black pepper
Directions:
Toss the watermelon, mint leaves, oil, and lime juice together in a large bowl just before serving. Arrange salad in a big bowl or on individual plates. Sprinkle feta cheese and a bit of fresh ground black pepper on top.
