Stir Fry Goodness
Ingredients:
olive oil
2 cloves garlic, chopped
4 tbl soy sauce (more if desired)
red onion, chopped
green onions, chopped
small bag of fresh or frozen stir fry veggies
1 tsp vinegar
1 lb chicken, cut up
Cooked brown or white rice
Directions:
Cook chicken in oil until almost done. Then add veggies and remaining ingredients except rice and green onions. Cook until veggies are tender and chicken is cooked through. Serve over rice and top with green onion.
Veggie Tacos
Ingredients:
1 zucchini, chopped
1 yellow squash, chopped
1 red onion, sliced
1 can corn
1 red bell pepper, sliced
1 tsp cumin
1 tsp garlic powder
1 tbl olive oil
corn tortillas
Avocado topping (recipe below)
Toss all ingredients together and cover with oil. Bake at 375 for 30-40 minutes. Place mixture in tortilla and top with avocado sauce.
Avocado topping:
2 avocados, diced
8 oz greek yogurt
Squeezed of lime to taste
cilantro, chopped to taste
salt and pepper to taste
8 oz crumbled Feta cheese
Combine all ingredients until smooth.
