Ingredients:
2 slices of sour dough bread
2 slices gouda cheese
2 slices smoked provolone cheese
2 slices cheddar cheese
3 slices of tomato
Fresh basil pesto (recipe below)
Directions:
Butter bread on outer sides. Place cheeses and tomato slices in the center to make a sandwich. Place on griddle until golden on both sides. Serve with pesto sauce. Makes 1 sandwich.
Basil Pesto:
3/4 cup fresh basil
1/2 cup grated parmesan cheese
1/4 clove garlic, peeled and quartered
3/4 tsp sea salt
1/2 tsp black pepper
1/2 cup extra-virgin olive oil
Blend all ingredients in food processor until nearly smooth. Ready to use.
