Amy's Favorite Cranberry Apple Salad

Ingredients:
1 1/2 cup real mayonnaise
2 to 3 tablespoons apple cider vinegar
1/4 cup apple cider or apple juice
2 to 3 tablespoons brown sugar
8 to 10 cups spring mix lettuce
1 diced green apple with skin on
1 diced red apple with skin on
1/4 cup dried cranberries
1/4 cup toasted chopped pecans
Directions:
Whisk together mayonnaise and apple juice. Whisk in 2 tablespoons brown sugar and 2 tablespoons cider vinegar. Taste and add a little more vinegar if you like it tart or more brown sugar if you want it a little sweeter. Refrigerate for a few hours. (You can make this dressing up to 2 days before using. Just stir well before serving and if too thick, add a little more apple juice or milk). Divide lettuce up on 4 to 6 plates. Drizzle a little dressing on top of each salad. Top with apples, cranberries and nuts. Serve an extra dressing on the side.
