Ingredients:
1 cup dark raisins
6 large golden delicious apples
zest of 1 lemon
juice of 1 lemon
6 Tbsp honey
6 Tbsp apricot preserves
Directions:
In a bowl soak the raisins in very hot water for about 1 hour, then drain.
Preheat the oven to 375 degrees peel the apples ¾ of the way down and core the Apples. Cut a small amount off the base of the apple so that it will stand in the dish straight up. Combine the Raisins, honey, lemon zest and juice and fill the hollow cores of the apples. Place the apples in a baking pan where the apples will fit snuggly and out ½ cup of water at the base of the pan.
Cover with Aluminum Foil and bake for about 1 hour checking after 30 minutes, check every 10 minutes. Decant the water and juice from the baking process after the apples are fork tender and place in a saucepan with the apricot preserves, bring to a boil to thicken and pour over the apples in a serving vessel. Serve warm or cold.
