Banana Oat Bars

Recipe from Lindsay Brooks.

Ingredients:

2 ripe bananas, peeled
1 tsp vanilla
2 cups rolled oats
Pinch salt
1/4 cup chopped dried figs
1/4 cup chopped walnuts
Pinch of each grated nutmeg & cinnamon
 
Directions:
 
Place the bananas in the food processor. Chop until thin. Add dried figs, vanilla, salt, cinnamon, nutmeg. Pulse until mixed. Stir in oats. Pat into a grease 8" square baking pan.  Place into a 350 degree oven for 30 minutes, or until edges are crisp. Cool completely and cut into bars. Store at room temp.
