Bean and Rice "Chimichangas"

Ingredients:

3 cups cooked rice
1 can refried beans
1 can Ro-tel, drained
3 cups shredded Monteray jack cheese
1 package burrito size tortillas
Oil for frying

Directions:

Preheat oven to 350. Combine beans and Ro-tel in a sauce pan till warmed through. Lay a spoonful of rice in the center of the tortilla. Top with bean and Ro-tel mixture and generous layer of cheese. Fold tortilla up. Flash fry both sides using large griddle or frying pan. Place in oven till lightly browned, about 10 minutes.
