Ingredients:
2 bags spring mix salad greens
1 to 2 cups fresh blackberries
1/2 chopped red onion
1/2 cup chopped pecans
4 ounces goat cheese
Dressing:
1/4 cup champagne vinegar
1/8 cup extra virgin olive oil
1 Tbsp dijon mustard
1/8 cup water
2 Tbsp honey
1 tsp onion powder
1 tsp salt
1/4 tsp freshly ground black pepper
Directions:
Combine all dressing ingredients in a tightly closed jar. Shake until completely blended. Set aside. Heat a skillet on high and add pecans. Toast, stirring frequently for approximately 2 minutes. Remove from heat. In a large salad bowl, combine lettuce, blackberries, red onion, and pecans. Drizzle dressing over salad and toss. Top with crumbled goat cheese.
