Blackened Fish

Recipe from Jambalayas Authentic Cajun Catering.

Ingredients: 

2 to 3 lbs fish steaks or filets
3/4 cup Blackened Seasoning
3-4 tablespoons of cooking oil
non stick cooking spray
cast iron skillet or griddle
lemon slices
fresh parsley
 
Directions:
 
Lightly brush fish steaks or filets with cooking oil and generously coat both sides with blackened seasoning. Heat up skillet/griddle on med-high heat and get it hot enough to steam a drop of water instantly
 
Lightly spray with cooking spray and immediately place fish in skillet. Cook for a few minutes on each side and transfer to plate. Garnish with a lemon slice and a stem of parsley!!
 
Warning: Blackened foods produce some smoke when cooked. Make sure you range vent fan is running high and open a few windows if you are doing it inside.
