Ingredients:
2 cups fresh blueberries
1 tbsp cornstarch
1 tbsp grated lemon zest
1/2 cup sugar
pie dough (recipe below)
egg wash
Directions:
In a large bowl, toss together blueberries, cornstarch, zest, and sugar until well combined. Roll out prepared pie dough to 1/8" thick. Place dough on a parchment lined baking sheet. Spoon blueberry mixture onto center of dough, leaving a 1 1/2-inch border around edge. Brush this edge with egg wash. Fold edge of dough over 1 inch of blueberry mixture, pleating dough. Brush pastry with egg wash. Place into a 375 degree oven and bake for 25 minutes. Or until golden brown.
Pie Dough:
1 1/4 cups all-purpose flour
pinch salt
4 oz butter, chilled and cut into small pieces
3-5 tbsp ice water
In the food processor, combine flour, salt, butter and process until the mixture resembles coarse meal, 8 to 10 seconds. Transfer mixture to a large bowl. Add water and toss with you hands until mixture comes together.
