1-2 Tbsp olive oil
1 medium onion chopped and cooked
1/2 pound jimmy dean sausage
1/2 bag shredded potatoes (thawed) 4 cups
6 eggs each eggs slightly beaten
1/2 tsp ground mustard
1 cup shredded cheddar cheese
salt and freshly ground black pepper to taste
Sauté 1 medium onion with 1/2 pound sausage in a large frying pan until sausage is cooked. Add 1/2 bag thawed shredded hash brown potatoes to pan and fry until starting to get crispy, you may need just a bit more olive oil.
Whisk 6 eggs in a bowl and add 1/2 t ground mustard.
When hash brown mixture is brown, pour eggs over hash browns, stir until blended. Add salt and pepper to taste. Cook until eggs are done.
Sprinkle in about 2 handfuls of grated cheddar cheese. Stir until cheese is blended and melted.
Serve with toast and fresh fruit and you have a awesome breakfast for the whole family
