4 boneless chicken breast halves, pounded thin
2 cups frozen chopped broccoli, thawed
4 slices cheddar cheese
Salt and pepper
Plain wooden toothpicks
1 cup seasoned breadcrumbs
2 eggs, beaten
3 tablespoons water
2 tablespoons melted butter
Preheat oven to 350°. In a shallow dish combine egg and water to make an egg wash. Fill a second shallow dish with breadcrumbs. Place a slice of cheese in the center of the chicken and top with some broccoli. Wrap chicken around to completely cover cheese, using toothpicks to secure. Season with a little salt and pepper. Dip chicken into egg wash, then breadcrumbs. Line a cookie sheet with foil and spray with cooking spray. Place chicken on cookie sheet. Brush chicken with butter and bake about 30 to 45 or until golden and cooked through. Make sure to remove toothpicks before serving.
