Ingredients:
1 medium bunch of broccoli
1 medium red onion, sliced
1 box pasta (long form preferred)
2 cloves garlic, minced
1 lemon (juice and zest)
1/2 cup dry white wine
2 Tbsp olive oil
1 Tbsp butter
1/2 Tbsp dried herbs (can use Italian seasoning)
Salt & pepper to taste
Directions:
Cut bottom of broccoli stems off and discard. Then cut flower head off of stems. Cut stems into large dice. Separate flower into bite-sized pieces (similar to what it looks like in a veggie tray). Place all pieces into medium sauce pot, fill with water and salt. Bring to a boil, and cook for about 5 minutes. Then drain and set aside.
Prepare pasta water. Bring to a boil, then place uncooked pasta into the water.
In a pan, heat olive oil and add onions. Cook for about 5 minutes, then add garlic. Sauté until garlic is fragrant. Add herbs and broccoli and sauté for another 5 minutes.
Add wine to sauté pan and allow alcohol to cook off. Then zest lemon right into sauté pan, slice lemon in half and add juice into the mix. Allow to cook for another 3 minutes and then add butter.
Drain pasta and add to sauté pan. Toss together on the heat for about 2 minutes, ensuring all ingredients are incorporated. Take off heat and it's ready to serve.
