Recipe from The Club in Manitowoc.
6 oz chicken breast, diced into 1 inch cubes
8 oz cooked linguine
4 oz assorted vegetables
2 Tbl Cajun seasoning
½ cup heavy cream
¼ cup grated parmesan cheese
1 Tbl vegetable or olive oil
salt and pepper to taste
Saute chicken in oil until brown and cooked through about 3-4 min. Add in vegetables and continue to cook on high until vegetables are just cooked, about 2-3 min. Add Cajun seasoning and heavy cream. Bring to a boil and reduce over high heat for about 3 min. Add in parmesan cheese to thicken sauce. Toss in cooked linguine into the pan to coat pasta and put in to serving bowl.
