Champagne Roasted Turkey Breast

Ingredients:

5-6 lb turkey breast

1/2 lb red seedless grapes, cut in half and divided

salt and pepper to taste

1 bottle (750 ml) Champagne

16 oz chicken stock

2-3 Tbsp cornstarch

Directions:

Preheat oven to 350 degrees. Season turkey with salt and pepper and place the turkey breast in a roasting pan with half the grapes. Pour champagne around the turkey. Bake for about 2-21/2 hours or until juices run clear. Baste every 30 minutes with pan juices. When turkey is done let it rest 10-15 minutes before carving.

In a medium sauce pan combine the chicken stock, pan drippings with the cornstarch. Bring to a boil over medium-high heat, stirring constantly until thick. Stir in the remaining grape halves and cook for 3-4 minutes or until heated through.

Serve the sliced turkey with the champagne grape sauce.
