Recipe from Paddock Club Restaurant.
Ingredients:
2 oz Roquefort cheese
2 oz Belletoille Brie
2 oz Bellivitano reserve
2 oz Humbolt fog goat cheese
1/4 cup toasted pecans
2 tbls WI honey
1 bunch of red grapes
2 tbls red wine cherries
Toasted bread
Red wine cherries
1 cup dried unsweetened cherries
1 cup red wine
1 stick cinnamon
1 whole star anise
2 tbls sugar
Directions:
Combine all ingredients in a small pot and simmer until the wine is reduced to 1/4 cup. Remove the cinnamon and star anise and cool. Combine all ingredients on a large platter.
