1 tablespoon olive oil
10- 6 inch corn tortillas
1lb boneless, skinless chicken breast (cut into small bite-size pieces)
1 tablespoon cumin
1 tablespoon chili powder
1 tablespoon lime juice
1/4 teaspoon garlic salt
1- 15 oz black beans (drained and rinsed)
2/3 cups shredded sharp cheddar cheese
1 medium green pepper (sliced)
1 head romaine lettuce (shredded)
Preheat oven to 425. Brush tops of tortillas with oil. Bake for 8-10 minutes, or until starting to turn golden brown. While baking, cook chicken pieces over medium heat until juices run clear. Stir in cumin, chili powder, garlic salt, lime juice and beans. Stir to combine. Top each tortilla with bean mixture and sprinkle with cheese. Return to oven to melt cheese, about 5 minutes. Serve with sliced pepper and shredded lettuce.
