Recipe from Kangaroostaurant.
2 green onions, finely chopped
1/2 medium sweet potato, peeled and cut into tiny little cubes
1 tsp sunflower, vegetable or olive oil
1 lb ground chicken
1/2 tsp sea salt
1 garlic clove, minced
1 tsp paprika
1 Tbsp fresh cilantro, finely chopped
Chipotle Mayo (recipe below)
Toss sweet potatoes in oil. Roast in 350 degree oven for 30-40 minutes or until brown and crispy. Cool completely.
Combine all ingredients in bowl using hands.
Cook in skillet 4 minutes per side.
Serve on multigrain roll with Chipotle Mayonnaise and greens.

1 chipotle pepper
1 tsp lime juice
Combine all ingredients well and chill.
