Ingredients:
2 pounds lean ground hamburger
1 medium onion, finely diced
1 medium bell pepper, diced
2 cloves garlic, minced
Salt and pepper.
2 teaspoons ground cumin
1 teaspoon paprika
1/4 teaspoon dried oregano
2 tablespoons chili powder
1 can (6 ounces) tomato paste
1 can (15 ounces) diced tomatoes
1 can (15 ounces) chili beans
5 cups beef stock
1 cup water
2 cups elbow macaroni
2 cups shredded cheddar cheese
Sour cream (optional)
Directions:
In a large pan brown beef with onions and green pepper. Cook until beef is no longer pink and crumbly. Season with salt and pepper, cumin, chili powder and oregano. Cook for another minute. Stir in tomato paste, beef stock, and tomatoes. beef stock. Bring to a boil and add macaroni. Turn to a simmer and cover. Cook until macaroni is tender, about 10 minutes. Serve in bowls with shredded cheese and sour cream on top.
