Recipe from Chef Matt Winters.
Ingredients:
4 fresh hot dog buns
2 tbs. butter spread, soft
2 tsp granulated garlic
4 festy dogs
1/4 cup diced green chilies, canned
1/4 cup diced yellow onions
3 cups canned chili
1/4 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup chopped green onions
Directions:
In a medium sauce pan warm canned chili per directions. Spread butter on opened hot dog buns. Sprinkle evenly with garlic. Pre heat a large skillet on medium high heat. Place buns butter side down in the skillet and cook until the surface of the buns are nicely browned. Remove the buns and set them aside for later use.
Slit the festy dogs lengthwise without cutting all the way through, just enough to open them up to lay flat. Using the same skillet place the festy dogs opened side down. cook each side 2-3 min. Remove festy dogs from skillet and reserve in a warm oven (250*).
In the same skillet place diced yellow onions and diced green chilies. cook for 3-4 min, until onions soften.
Place festy dog on the buns. Divide the green chilies and onion mixture evenly and place on top of the festy dog. Top the dogs with 3/4 cup of the heated canned chili. Top each dog with 1 Tbs sour cream and 1 Tbs chopped green onion.
