Chocolate Eclair Torte

Recipe from Village Green Lodge.

Ingredients:

Pastry:

1 cup flour
1 cup water
6 tbls butter
4 eggs

Filling:

2 - 3.5 oz packages of vanilla instant pudding
2 cups low fat half and half
8 oz container of low fat whipped topping- thawed
Beat pudding and half and half at low speed until thick. Fold in whipped topping.

Chocolate Frosting:

2 cups powdered sugar
1 cup cocoa powder
1 tsp vanilla extract
1/2 tsp almond extract
3-5 tbls milk
Mix all ingredients until smooth and creamy.

Directions:

Heat water and butter to boiling. Remove from heat and stir in flour until mixture forms a ball. Cool slightly and add eggs one at a time, beating after each. Spoon mixture in the shape of a ring on an ungreased baking sheet. Bake at 400 degrees for 45-50 minutes, or until golden brown and puffy. Cool. Slice in half horizontally. Fill with filling. Place top layer on top of cream filling. Frost with chocolate frosting.
