Falafel

Recipe from Madhouse Grill in Neenah.(No longer in business)

Ingredients:

1 15 oz can of chickpeas (garbanzo beans)
1 clove garlic, chopped
1/4 cup cilantro, chopped
1/4 cup green onion, chopped
1/4 cup olive oil
flour, just until chickpea mixture gets combined
salt/pepper to taste
2 pita breads
Plain Yogurt
Cucumber, peeled and diced
lettuce
tomato
red onion

Directions:

Drain chickpeas and dump into a food processor with chopping blade. Turn on, stop and scrape down chickpeas and restart, do this a couple of times until all of the chickpeas are chopped. Add cilantro, garlic, and green onion and chop in the food processor. Drizzle in olive oil until you get a smooth consistency. Remove from food processor and place mixture into a bowl. Add flour and mix.  Continue adding flour until the mixture binds and you can form a patty without it falling apart.

Add oil to a pan. Form mixture into a patty and cook until browned then flip and cook until browned.

Mix yogurt, cucumber, salt and pepper to taste.

Warm the pita bread in the oven.  Place cooked patties on top. Top with cucumber yogurt sauce and fixings.
