3 to 4 tomatoes, seeded and diced
1 to 2 cloves garlic, minced
2 tsp olive oil
Pinch of salt and pepper
4 tbls chopped basil leaves, divided
Sliced toasted French bread
A few tbls freshly shredded Parmesan cheese
Mix tomatoes, garlic, and oil together. Stir in 2 tablespoons of chopped basil. Season with a pinch of salt and pepper. Spoon tomato mixture over toasted bread slices. Top each piece of bread with some shredded cheese and remaining basil.
