Ingredients:
6 eggs, beaten and seasoned with salt and pepper
1 cup total of green and red bell pepper, onion, and mushrooms, chopped
3/4 cup Italian blend cheese
1/2 tsp fresh rosemary
Directions:
Saute veggies in large non stick pan with olive oil. Once soften, add eggs. On medium heat, as eggs set lightly lift the corners so uncooked egg can get to the bottom the pan. When the eggs are about 80% set, add cheese to the top and finish cooking for a few minutes in the broiler (about 3 to 5 minutes, but watch it closely). It is done when eggs are set and cheese is browned. Place on serving plate and garnish with rosemary. Can be served hot or at room temperature.
