Garlic and Herb Mashed Potatoes

Ingredients:

6 large potatoes,  peeled and cubed
1 pkg (5.2 ounces) Boursin cheese with garlic and herbs
1/4 to 1/2 cup milk
Salt and pepper
2 tablespoons chopped flat-leaf parsley
 
Directions:

Boil potatoes until fork tender and drain.  Mash potatoes with potato masher until smooth. Add cheese and ¼ cup milk.  Mix well.  If it’s too thick, add a little more milk. Season with salt and pepper. Places potatoes in a casserole dish that has been sprayed with cooking spray. Cover with foil and bake in a pre-heated 350 degree oven for 20 to 40 minutes or until heated  through. Sprinkle fresh parsley on top before serving.
