1 lb ripe peaches, halved and pitted
Splash canola oil
2 tbls onion, chopped
2 tbls problano pepper, chopped
2 tbls red pepper, chopped
1 tbls lime juice
1/4 cup fresh cilantro, chopped
salt & pepper to taste
Preheat grill to medium. Brush cut sides of peaches with oil. Grill the peaches until softened and browned in spots, 3 to 5 minutes per side. Let cool. Chop the peaches and add in remaining ingredients.
