Recipe from Chef Ken Hall.
Ingredients:
Pineapple Batter:
1 can pineapple juice
1 cup flour
1 tsp baking powder
1/2 tsp salt
mix together in a bowl until smooth.
Pineapple Dip:
1 can chopped pineapple
1/4 cup white vinegar
1 Tbsp minced, onions
1 can pineapple juice
1 Tbsp butter
Bring to a boil, thicken with cornstarch slurry and blend.
