Hawaiian Chicken Tenders

Recipe from Chef Ken Hall.

Ingredients:

1 cup crushed frosted flakes
2 cup pineapple batter (recipe below)
1 cup flour
3 chicken breasts cut into strips
 
Cut the chicken breasts into strips about 1/2 inch thick. Dip in flour and shake off extra then into the pineapple batter, then into the frosted flakes. Place on a baking sheet and bake at 350 degrees until golden brown about 12-15 minutes. Serve with pineapple dip.

Pineapple Batter:

1 can pineapple juice
1 cup flour
1 tsp baking powder
1/2 tsp salt

mix together in a bowl until smooth.

Pineapple Dip:

1 can chopped pineapple
1/4 cup white vinegar
1 Tbsp minced, onions
1 can pineapple juice
1 Tbsp butter

Bring to a boil, thicken with cornstarch slurry and blend.
