Holiday Ice Cream Sandwiches

Recipe from Chef Ken Hall.

Ingredients:

5 oz bittersweet chocolate, chopped
3/4 cup flour
1/2 tsp cinnamon
1/4 tsp baking powder
dash of salt
dash of black pepper
1-1/4 cup sugar
1/4 cup butter
1 egg
1 tsp vanilla

tub of peppermint ice cream
crushed candy canes
chocolate sauce

Directions:
 
Place chocolate in a glass dish and microwave for 30 seconds, stir and heat again until almost melted, remove and stir until smooth. Combine flour,and seasonings in a bowl, reserve. Beat together the butter and sugar for 3-4 minutes, scrap and add the egg, mix thoroughly, stir in chocolate and vanilla. Add the flour stirring until combined. Drop by tablespoon 2 inches apart on baking sheet coated with spray, bake at 350 for 10 minutes and remove.
 
When cooled place a scoop of peppermint ice cream on half of the cookies and cover with the other half, place in freezer until ready to serve. To serve remove from the freezer and drizzle with chocolate sauce and crushed candy canes.
