Layered Fiesta Salad

Recipe from Festival Foods.

Ingredients:

2 cans (15 oz) black beans, rinsed and drained
2 cans (4 oz) diced green chiles
4 cups shredded romaine lettuce
2 cups seeded and diced tomatoes
2 cups shredded cheddar cheese
1/2 cup sliced ripe olives
1/2 cup sliced scallions
1 1/2 cup prepared quacamole
1 1/2 cups sour cream
1/2 tsp garlic powder
2 cups crushed tortilla chips

Directions:

In a 2-1/2-quart clear glass salad bowl layer in this order, black beans, green chiles, lettuce, tomato, cheese, olives, and scallions. For dressing, in a medium bowl stir together guacamole, sour cream and garlic powder. Spread over the top of the salad. Cover the surface with plastic wrap and chill for at least 2 hours or up to 24 hours. Top with crushed chips before serving. You can decorate the top with extra diced tomatoes, cheese, olives, or scallions if you like!
