Recipe from Alpha Delights.
1 ½ cup ground ginger snaps
2 oz. butter, melted
Directions for Crust:
Use a food processor to grind up the ginger snaps to a even crumb consistency.
Mix in the butter to get an even,moist consistency.
Firmly press into a 7" tart pan (with removable bottom) that's about 1 ¾" tall.
Chill. Remove from pan.
¾ cup whipped heavy whipping cream
12 oz lemon curd
Fold these two ingredients together until evenly blended. Pour into the chilled tart shell. Chill overnight before cutting.
