Ingredients:
1 stick of butter
4 cloves of garlic, minced
1 cup dry white wine
Pinch of red pepper flakes
juice of half a lemon
1/4 cup fresh chopped Italian parsley, divided
2 Roma tomatoes, seeded and diced
1/2 cup heavy cream
1 1/2 to 2 cups cooked, chopped lobster meat
1 lb linguine, cooked al dente
grated Parmesan cheese
Directions:
Heat butter in a medium skillet over low to medium heat. Add garlic and cook 30 seconds, stirring constantly. Add tomatoes , 2 tablespoons parsley, red pepper flakes,salt and pepper and white wine. Cook another minute. Add lobster meat and heat a minute until warm. Add heavy cream and lemon juice. Simmer until lobster meat is heated through. Toss with pasta and serve with Parmesan cheese and extra parsley on top.
