Magic Spoon Roast Nachos

Recipe from Chef Matt Winters.
 

Base:
     
1 lb guacamole corn chips     
1 lb yellow corn chips     
1 pint hot canned nacho cheese sauce     
     
Meat Topping:  
   
1 lb cooked shredded burgundy spoon roast     
1 pack taco mix     

Directions:

Follow directions as if you were using cooked burger meat. Brown hamburger and add taco mix per directions and cook until done.    
     
     
Additional toppings:
 
1/2 cup diced fresh tomato    
1/2 cup chopped green onions   
1/2 cup sliced olives  
1 lb shredded cheddar cheese   
1 cup sliced jalapenos    
1/4 cup guacamole   
1/4 cup sour cream   
2 cups spicy canned chili, heated    

Assembly:

Combine 1/2 of chips. Top with 1/2 shredded cheese, 1/2 chili, 1/2 taco meat, 1/2 cheese sauce. Repeat process. Top with all other ingredients .
