Recipe from Zuppas.
Ingredients:
2 tbl olive oil
1 onion, chopped
3 garlic cloves, chopped
2 carrots, peeled & chopped
2 celery stalks, chopped
2 zucchini, diced
2 qts chicken or vegetable stock
1 14 oz. can diced tomatoes
1 15 oz. can cannellini beans
1 cup frozen peas
1 cup frozen corn
1 bunch fresh basil, chopped
salt & pepper to taste
Directions:
Saute vegetables in olive oil. Add diced tomatoes, beans and stock. Bring to a simmer. Then add frozen vegetables. Add salt and pepper to taste and finish with chopped basil.
