Ingredients:
3 slices white bread, torn into small pieces
1/4 cup milk
2 1/2 pounds lean ground beef
2 large eggs
1/4 cup grated Parmesan cheese
3 tablespoons grated onion
2 tablespoons minced fresh parsley
1 teaspoon garlic salt
1/4 teaspoon coarsely ground black pepper
1 to 3 cloves garlic, minced
Directions:
Preheat oven to 425 degrees. Line a jelly-roll or large baking pan with foil. Spray foil with nonstick cooking spray. In large bowl, combine diced bread and milk and mix until bread is evenly moistened. Add ground beef and remaining ingredients. Mix until well combined. Shape into about twenty-four 2-inch meatballs. Place meatballs on the pan and bake for 15 to 20 minutes, until cooked through and lightly browned. Meatballs can be frozen for up to 3 months. To thaw meatballs for use in recipes, place frozen meatballs in refrigerator overnight. Or, microwave using 50 percent power for 2 to 4 minutes until just thawed.
