Organic Blue, Spicy Greens, Potato Pizza

Ingredients:
1 each pizza dough, divided into two (recipe follows)
1/4 cup cornmeal
1 tablespoon extra-virgin olive oil
4 ounces organic blue cheese
1 each yukon gold potato, thinly sliced
1 cup spicy greens, chopped (komatsuna, radicchio, mustard)
1 teaspoon thyme, freshly chopped
1 each farm fresh egg (small size)
Kosher salt to taste
Black pepper, freshly ground, to taste
1/4 teaspoon Red pepper flakes
Pizza Dough
1 1/4 cups Warm water
1 each Package yeast
1 tablespoon Kosher salt
1/4cup Extra virgin olive oil
2 1/2 cups All-purpose flour
1/2 cup Semolina flour
Directions:
In a medium bowl add 1/4 cup of water to yeast and stir to dissolve. Allow the yeast to proof. Add rest of water, salt and olive oil and mix well. Using a wooden spoon, add the flour, one cup at a time. When the dough is too stiff, put it on a clean board and knead until smooth and elastic, about 7 minutes. This dough should be a little sticky. Put the dough in an oiled bowl, cover with plastic wrap and allow to rise until doubled in bulk, about 2 hours. Punch down and let rise again for 45 minutes.
