Peach Custard

Ingredients:

1 cup sugar
1/3 cup flour
1/8 tsp salt
2 egg yolks
2 egg whites
2 cups milk
1 tsp vanilla extract
1/2 tsp lemon extract
1/2 tsp almond extract
3 cups peeled and sliced fresh peaches or 3 cups sliced canned peaches

Directions:

Stir flour, sugar and salt together in pan.  Add 2 cups milk and 2 beaten egg yolks.  Cook until thickened, stirring constantly.  Add vanilla, lemon and almond extracts.  Beat 2 egg whites until stiff.  Fold into thickened, hot mixture.  Place sliced peaches in 2 quart dish.  Pour custard mixture over top and chill.
