Recipe from Village Green Lodge.
Ingredients:
3/4 cup sugar
1/3 cup flour
1 tsp baking powder
4 cups (2 – 20 ounce cans) canned, drained pineapple chunks
2 tsp lemon zest
Directions:
Combine sugar, flour, baking powder, pineapple and lemon zest in large bowl. Pour into greased 9 “ square pan. Mix topping ingredients in food processor until crumbly. Sprinkle over pineapple mixture. Bake at 350 degrees for 40-45 minutes or until golden brown.
Topping:
1 1/2 cups flour
2 teaspoons baking powder
1 cup sugar
1 egg
1/2 cup butter
